Lightened-up sweet potato casserole. 6 slices lite bread. 1 cup each of chopped onion, chopped celery, chopped Granny Smith apple. 1 cup fat free chicken broth. 1/4 cup egg beaters. 1/4 cup dried cranberries. Salt, Pepper, Sage to taste ( 1tsp each). Pre-heat oven to 350 degress. Cube the bread (make sure it’s stale or lightly toasted), place in greased casserole dish. 1 cup skim milk.

Cook onion over medium heat about 20 minutes, stirring occasionally, until cooked down and deep golden brown. Rinse 1 cup brussel sprouts, cut each sprout in half. Drizzle with 1 tsp olive oil, 1 TB maple syrup, and place on baking sheet sprayed with Pam. Whole Wheat and Oatmeal Raisin cookies. 8211; perfectly chewy!
