November 3, 2010. Christmas is approaching fast so I thought I would give you the recipe for candied apples (which in all fairness are great all year round). Although there is a fair bit of sugar used in this recipe, I do believe they are a great and healthier alternative to other Christmas treats. Before you read on though, I would just like to ask for two seconds of your time to help me win a stay at Ballymaloe Cookery School. The company behind the competition). Thanks for your support. Put sugar, wat...

Sunday, 26 February 2012. Warm me up Curry - Spicy sweet potato and coconut. There's nothing like a nice spicy curry to warm you up when you get home in the evening. You don't have to run down to the local Chinese or Indian to get a curry, here is a recipe that is absolutely delicious and takes less than 20 mins to make. Save money and eat at home! 1 tbsp sunflower oil. 2 tsp of curry paste. 2 large chicken breasts, cut into bite-size pieces. Potatoes - peeled and cut into bite-size pieces. 1 egg, beaten.

The OBriens Wine Masterclass tent, with the Electrolux Theatre in the background. There was the usual mix of vendors, demonstrations and an opportunity to taste some of the best restaurants in Dublin. I especially enjoyed the Thai pavilion, that was set up at the back of the event, with plenty of seating provided by Elephant Beanbags. August 8, 2011.

83 Days at Ballymaloe. An unassuming amateur’s attempt to share the culinary genius of this little known arcadia on the Emerald Isle. Monday, November 30, 2009. Twas a rather hectic Monday! Some prankster left the windows open all weekend, so the kitchen felt like an igloo on Pluto, only colder. "French Trimming" a rack of lamb is significantly more difficult when you cannot feel your fingers! I could see my breath until about 11 AM, when the ovens mercifully began to warm the place up. When adding milk ...

Friday, October 29, 2010. London Calling, part 2! I’m sorry if you thought that you had been abandoned by us in the past few months, you would be forgiven for thinking so. We have not disappeared, but have both been going through some major life changes. On my part, this involved a move to London, England. Home of red telephone boxes, double decker buses, pie and mash shops, and y’know, the Queen. Seriously, their chicken soup tastes like your Grandmother’s homemade recipe) really is a dream-come-t...
