The Castel San Giacomo Brand represents the winery blends. Castel San Giacomo Bianco Sicilia. IGP Sicilia (Protected Geographical Indication). Sant’Oliva Contrada agro of Licata province of Agrigento Sicily. The grapes are destemmed but not pressed and immediately go through soft pressing. Fermentation of the must continues for 15 days at controlled temperature between 15 to 18 C. Refinement takes place in stainless steel tanks for 4 months and bottle-aged for 2 months. Straw-yellow with green nuances.
