F course these are bad for you, but that's exactly why they taste so good:) I watched Emeril prepare these on TV and it looked so easy to make and so decadent that I had to try it. I had never tried making them at home, usually I ordered it at a restaurant. And it is very easy to prepare, goes great with pasta. Or the puttanesca sauce is really great with french fries. Friday, November 16, 2007. Zucchini Fritters with Herbs and Cheese. Love this recipe which is from Bon Appetit, but it needed to have a lot of changes for my taste. Most of the suggestions were from Epicurious and they were all great. I followed some of them and the result was perfect:) The recipe is the original recipe, below are the changes I made. You can use regular Italian breadcrumbs that you buy from your local store, they are just as well as the wheat breadcrumbs. 1 cup finely chopped red onion.

You will keep on making them once you taste them:). If you don't have summer savory like I don't:) use thyme instead, it works just as well. If you want, you can also use a little bit of sage with the thyme. I don't like sweet sauces all that much, so I cut down the honey to 2 tablespoons. Thursday, December 27, 2007. S soon as someone says souffle the first word that comes to mind is difficult. But it's not difficult at all if you follow the directions below, from Alton Brown. He does such a good job of explaining every step that you can almost not go wrong. And once you can make a souffle, you will feel like you have taken over the world:). Once you can temper, and you can beat the yolks to creamy consistency, you can't really go wrong. Butter, room temperature, for greasing the souffle.

You don't necessarily have to prepare the Parmesan toasts, and use melba toast or crackers, but if you have the time go for it. They are very tasty:). The only change I have made to this recipe was to put the spread into the blender so that it was more like a spread than a salsa. If you like, you can also add some cumin to the spread which enriches the flavor.
