Thai Turkey Lettuce Cups. 1lb ground turkey (ground pork works too). 1 head of Bib or butter lettuce-(I use romaine hearts and cut ribs out…I like the crunch and the lettuce stands up to holding the filling). 1tsp sirracha chili sauce (add more if you like it hot). 1/2 bunch cilantro chopped. 1/4 cup smooth peanut butter. 1/4 cup lime juice. 1tsp lite soy sauce. 1 cup shredded carrots.
