Just a little peek into my life. Recipe: Beef Stew with Roasted Vegetables. Beef browning in the pan. 1 pound beef stew meat cut into 1 inch cubes. 1 yellow onion diced. 2 cloves garlic minced. 2 tbs canola oil. 3 cups beef broth. 1/2 cup red wine. 1 6 oz can tomato paste. 3 medium parsnips peeled and cubed. 3 medium carrots peeled and cubed. 2 large potatoes peeled and cubed. 10 oz button mushrooms quartered. 2 tbs olive oil. Salt and Pepper to taste. Optional: Pinch of flour. Roasted veggies in the pan.

Things have been ridiculously busy and stressful at work and last Saturday was the boy’s birthday so I really haven’t had a ton of downtime. But, I’m back! I know how much you all missed me! I originally read this book when it first came out and I enjoyed it so much that I ended up recommending it to a bunch of people.
