Saturday, October 9, 2010. 5 1/2 c to 6 c bread flour. 2 1/2 t kosher salt. 2 1/4 t instant yeast. 1/4 t baking soda. 1/3 c unsalted butter, cut in cubes. In the bowl of the food processor add flour, sugar, salt, yeast and soda. Run 30 seconds to combine. Add cubed butter. Pulse 10x to combine. Combine buttermilk and water. Add to processor while running. (Adding a bit more water if necessary to form dough into a ball.). Run processor 45 seconds to knead the dough. Allow to double in bulk.
