Just another WordPress.com weblog. Posts Tagged ‘caramel’. October 23, 2009. Whatever you make with caramel you start at the same place- cooking sugar until it is an amber color. Most French (and some American) pastry chefs make a dry caramel . This is made without water. I avoid making dry caramel as it has a higher chance of cooking unevenly and burning. Adding water takes a few minutes longer (the water has to cook off before the sugar can cook) but it is much easier. Yield: 1 3/4 cups. Create a free ...

The first is a benefit dinner for The Red Cross and Hurricane Sandy victims on Thursday November 29. Barbeque Shrimps and Grits.

Just another WordPress.com weblog. Laquo; Sweet Jules Caramels. Dream Stand Mixer Attachments. December 15, 2012. I, like other professional pastry chefs and serious home bakers, love my stand mixer. It’s an extension of my hands but more powerful and quicker. It’s also an extra pair of hands. It can do its thing while I pull cakes out of the oven or refill the sugar bin. I especially rely on it this time of year when holiday baking is at its peak. Scoop cookie dough into balls. 10 Grate citrus zest.

Just another WordPress.com weblog. Laquo; Summer Pudding. August 21, 2009. Photo by Kim Goddard. I overdosed on sugar this week big time. I have been on a baking frenzy testing recipes for a cookbook I am writing. In 6 days Robyn, my pastry cohort, and I tested 32 recipes. Talk about a sugar rush. All this sugar has gotten me thinking. If I were on a dessert island what desserts would I want? What couldn’t I live without? What do I dream about even after a day of intense baking? Chocolate chunks give you...

World Nutella Day: Pierre Herme’s Nutella Tart. February 6, 2007 at 11:59 pm · Filed under Chocolate. I once ate a chocolate chip cookie that fell in the dirt. I wash ziplock bags and reuse them. I like taking the second-to-last item on a dish so someone else will feel guilty about taking the last one. After reading about Nutella’s history in detail, I no longer felt like a nut. I may eaten a jar of Nutella in one week, but one girl finished it by the spoonful over three days. Was first posted on Il Forn...
