Thursday, March 3, 2011. Every day is an adventure here in Malaysia. I came to school this past Sunday to see all my students in fancy baju kurangs and batik outfits. The students are usually in their school uniforms. Malaysia hopes to be a developed country by the year 2020. It was powerful and moving.

February 7, 2011. Last Tuesday night, we hopped on an overnight bus to one of my favorite places on earth: Penang. This island, off the west coast of Malaysia, is known for its rich colonial history. Unique fusion of many cultures, religions, and ethnicities, and most importantly, its FOOD. We picked Penang for Chinese New Year specifically because there is a significant Chinese population on the island, whereas the Chinese population in Terengganu is approximately ZERO. A little gypsy wind…. Came down the lane to meet them, laden with the spicy perfume of young dew-wet ferns. Roasted eggplant, red pepper, and garlic dip. January 6, 2015. 1 medium eggplant, peeled and diced. 2 red peppers, seeds removed and diced. 3 tablespoons olive oil. 1 1/2 teaspoons salt. 1 tablespoon tomato paste or roasted tomatoes. Prep and dice eggplant and peppers. Mix in a bowl with olive oil and salt. Spread on baking sheet. Refrigerate and let the flavors mingle or just enjoy right away!
