Anita says Yum!: Mexican Lasagna
http://auseeseyum.blogspot.com/2010/05/mexican-lasagna.html
Wednesday, May 5, 2010. 1 pkg (1.25 lbs) ground turkey or chicken. 2 Tbs canola oil. 189; cup chopped onions. 1-4oz can mild chopped chilies. Salt and pepper, to taste. 1-14oz. can enchilada sauce. 12 6-inch corn tortillas. 2 cups shredded Mexican cheese. Sour cream and cilantro, optional. This serves more like 4. I would serve with sides like refried beans and/or spanish rice. My family doesn't like corn tortillas so I used flour tortillas. Use spicier chillies if you like hotter foods. It's fun being me.
