Curried Lentils with Spinach. 1 Tbsp 1 tsp olive oil. 1 onion, diced. 1 tbsp curry powder. 1 tsp ground cumin. 1 tsp ground coriander. 1 can (540 mL) lentils, drained and rinsed. 1 can (796 mL) diced tomatoes. 4 cloves garlic, minced. 4 cups baby spinach. Oh well. My days are full with 3 little kids age 4 and under and some days we don't make it out of our jammies. Just keepin' it real. Baby Hayden joined us on February 7th @ 8:11am. 8lbs 4oz and 20" long. My sweet baby boy. Chillin' with momma and getting some needed rest. Who doesn't love a sleeping baby?
