Bran Muffins- BakeInfo (Baking Industry Research Trust)

Scones, Muffins, Loaves. 30 to 60 mins. 1 to 3 hours. The key to any good muffins is to stir the mixture only enough to combine the ingredients. Over mixing leads to tough and chewy muffins. Frac14; teaspoon salt. 4 Tablespoons brown sugar. Frac12; teaspoon baking soda. 2 Tablespoons melted butter. 1 teaspoon baking powder. 2/3 cup of milk. 2 Tablespoons golden syrup. Combine the dry ingredients in a bowl by firstly sifting the flour, baking powder and salt. Then add the bran, sugar and cinnamon.

Judging for the top young bread baker in New Zealand took place in Auckland yesterday with Nathan Roberts from Goodman Fielder in Auckland being declared winner of the 2015. Young Bread Baker of the Year. As winner of this year’s award, Nathan will have the opportunity to broaden his industry knowledge and experience through a $10,000 research grant. To be held in Sydney in May.

Kidds Cakes and Bakery of Christchurch was named winner of the 2015 Great New Zealand Hot Cross Bun Competition. This week the Baking Industry Association of New Zealand president, Michael Gray, will present Kidds Cakes and Bakery owner, Martin Meehan, with a trophy and certificate. Chocolate Cake and icing. Scones, Muffins, Loaves. 30 to 60 mins. 1 to 3 hours. Chocolate Cake and icing. Enjoy this cake chocolate cake and yummy icing with cream or yoghurt on the side. Frac12; cup milk. 1 teaspoon baking soda. 1 teaspoon vanilla essence. 1/3 cup of boiling water. 1 teaspoon baking powder. 1 ½ cups sifted flour. 2 cups icing sugar. 2-3 drops of vanilla essence. Mix well with a beater until the mixture is smooth. When baked, turn out onto a cake rack covered with a clean cloth.
