Sometime last year, and it’s so quick and delicious. I halved the recipe and used six of the Saturn peaches, as they’re smaller than the ones the recipe calls for, and it seemed about the right amount. With Mary Berry guiding the way as always, I’m pleased to say that I managed to produce my best shortcrust pastry to date. It was so thin and crisp! There were the usual few holes that needed patching but the texture was the perfect accompaniment to the smooth, creamy chocolate filling. Pomegranate and blueberry sorbet.
