I made this Lemon Cake. 1 tablespoons finely grated lemon rind. 1/4 cup confectioner’s sugar, sifted. 1 small container of blueberries. Icing (confectioner’s) sugar, for dusting. 1½ cups plain (all-purpose) flour, sifted. 4 oz cold butter, chopped. 189; cup confectioner’s sugar, sifted. 2 teaspoons vanilla extract. 1 tablespoon iced water.

Tuesday, February 8, 2011. 2 C AP. Flour. 1 1/2 C sugar. 3 1/2 tsp. B.P. 1/2 cup butter or shortening. Heat oven to 350 degrees. Grease and flour baking two 8" round pans. Measure all ingredients into large mixer bowl. Blend 1/2 minute on low speed. Scrape down sides. Beat on high speed for 3 minutes. Pour into pan. Bake for 30 to 35 minutes.
