Som hjälpmedel för att få igång jäsningen kan olika frukter blandas i surdegsstarten t ex äpple, vindruvor, russin och torkad aprikos mfl. Det finns mycket förenklat två traditioner när det gäller jäsning med surdeg. Det är därför bättre att använda ordet vildjäst.
