One of life’s great pleasures is feeding Friends and Family. Feeding a large crowd can be a little daunting. Not for Sue or Tom. They relish it. In fact they love most challenges! Copious dishes of delicious food. Cheesy roasted ratatouille or beef lasagnes. Sausage cobblers and bakes. Chicken, chickpea and chorizo casseroles. Creamy root vegetable dauphinoise. Chillies and curries with rice and all the trimmings. Stilton and wild mushroom filled chicken breasts. Ciabatta and pesto topped salmon fillets.

The night before this last trip I asked him what he would like me to cook for him as a farewell for- now dinner. He chose Butternut Squash Rissotto and here I share his favourite supper with you.
