It is relatively easy to make wonderful fresh homemade cheeses, but as part of the preservation process, you may want to brine your cheeses. 14-36 oz. Kosher salt. 2 cups Whey collected from making any mild cheese, ripened for 24 hours. 1 Tbsp ( 15ml) calcium chloride (30% solution). 1 Tsp ( 5ml) white vinegar.
