It can be used as a side dish or just as something different to accompany a meal! 1 green bell pepper. 1 large red bell pepper. 4 cloves crushed garlic. 1/4 c extra virgin olive oil. 1/2 tsp. salt. 1/2 tsp. ground black pepper. 1/2 tsp. cayenne pepper. Roast peppers on stove burners, or under oven broiler until skin turns evenly black. Immediately place in a plastic bag and let cool.

Peaches and Cream Pie. 3/4 c all-purpose flour. 1 3oz pkg. cook and serve vanilla pudding mix. 1 tsp baking powder. 1-4 large fresh peaches; peeled and sliced. 1 8oz pkg. cream cheese; softened. 1/4 tsp. cinnamon. In mixing bowl, combine the first 6 ingredients and beat for 2 minutes. Spread in a greased 9" pie plate. Arrange peaches over batter to within 1/2 inch of edge. In a small mixing bowl, beat the cream cheese and 1/2 cup sugar; spoon over peaches.
