Eating Well on the Cheap. Gogo Gadget Gospel" - Gnarles Barkley. It's been a bit drowsy over here, so I thought I'd share one of my fave cheap-o, yet delicious recipes. It's adapted from the British Bangers and Mash, and can be made on the cheap. Some potatoes - as many or few as you want to eat. Some mushrooms, about 1-2 cups, depending on how much you want to eat. Some onion, 'bout half of a large yellow or more - again, to your preference. Some olive oil, about 2 tablespoons. Salt and pepper to taste.

Eating Well on the Cheap. So, it's getting into the season of hearty soups. I am doing South Beach on the cheap (and have lost weight, yay! And discoverd this gem of recipe over at allrecipes.com. So, I'm sharing! 1 (145 ounce) can diced tomatoes. 3 stalks celery, chopped. 1 teaspoon dried oregano. 1 teaspoon dried basil. Salt and pepper to taste. 1/2 pound frozen cod fillets. 2 large mushrooms, chopped. 1 zucchnni, chopped. 1-2 boiled potatoes, chopped (I've never tried this one, though). It's good....

Eating Well on the Cheap. Easy Black Bean Soup. The Stand" - Hillsong. It's been a bit quiet around here letely, so I thought I'd add a recipe I found for easy black bean soup. I love this recipe! It is good as a hot soup, or over rice (I bet you could thicken it for a taco filling or on nachos). It's taken from the book You: On A Diet. 1 T olive oil. 1 onion, chopped. 3 garlic cloves, sliced. 2 stalks celery, chopped. 1 carrot, chopped. 1 tsp ground coriander. 1 T balamic vinegar.
