Tabbouleh (Arabic: تبولة‎). This is a delicious, healthy, colourful and filling salad and is a great served with grilled fish or meat or served with other salads as part of a vegetarian meal. It is very versatile and can be made ahead of time. A wonderful salad to take on picnics. 120g (4oz) fine bulgur. 500g (1lb) firm, ripe tomatoes, seeded and diced. Juice of 1 lemon or more as desired. Either 4 spring onions or 1 medium white onion thinly sliced. A large bunch of fresh flat leaf parsley finely chopped.
