Black Bean Vegetable Soup. 1tbsp veg. oil. 1garlic clove, chopped fine. 2 tsps. chili powder. 1 tsp ground cumin. 4 c veg. or chicken stock. 2 cans black beans, drained and rinsed. 1 can corn kernels. 1/8 tsp. cayenne pepper. 1 can diced tomatoes. 4 tbsp. chopped parsley (optional).
