The Cheese Chap: July 2014
http://www.cheesechap.com/2014_07_01_archive.html
Cheese of the Week. About The Cheese Chap. CHEESE OF THE WEEK: Occelli in chestnut leaves. Beppino Occellis range of grand cheeses are. Wrapped in everything from straw to tobacco leaves. Top five cheese and beer matches. Ive never really understood why red wine is lauded as the perfect partner for cheese. The tannins often clash and clang with the creaminess of the cheese horribly. Beer is better in my experience with more complementary flavours and a refreshing quality (maybe from the bubbles? That cle...
The Cheese Chap: James Aldridge: the Godfather of British cheese
http://www.cheesechap.com/2012/10/james-aldridge-godfather-of-british.html
Cheese of the Week. About The Cheese Chap. James Aldridge: the Godfather of British cheese. If you love British cheese, then you should read up on a chap called James Aldridge who died in 2001. He was a key figure in the resurrection of farmhouse cheesemaking in Britain in the 1980s and 90s, and his influence can still be felt today. And by cheesemonger Carl Bennett. Who worked with Aldridge for 17 years, the washed rind cow's milk cheese is named after his former mentor (Aldridge's Christian name was ac...
The Cheese Chap: Top five crazy Continentals
http://www.cheesechap.com/2015/03/top-five-crazy-continentals.html
Cheese of the Week. About The Cheese Chap. Top five crazy Continentals. Cheddar and Camemebert are all well and good, but sometimes only a cheese matured in a sheep's stomach will do (in Bosnia anyway). Here are my top five weird and wonderful European cheeses. Norwegians serve it on bread with fruit, honey or cream, presumably just before bedtime. Sir iz Mijeha - Sack Cheese. First published in Good Cheese magazine. To read more click here. The Cheese Chap: March 2015
http://www.cheesechap.com/2015_03_01_archive.html
Cheese of the Week. About The Cheese Chap. Top five new wave cheeses for 2015. The British cheese scene is an exciting place at the moment with a new generation of producers coming up with some fantastic new cheeses, which often draw on classics such as Brie and Stilton but have their own unique characteristics. . Any road, here are my top five to try this year. Cheese of the Week: Anster. It has a natural grey rind (no bandages or butter) and is matured for three months. Similar to Cheshire or Wensl...
The Cheese Chap: Elbow deep in curds at the School of Artisan Food
http://www.cheesechap.com/2014/12/making-cheese-at-school-of-artisan-food.html
Cheese of the Week. About The Cheese Chap. Elbow deep in curds at the School of Artisan Food. Go-go: making a lactic cheese. We've barely had time to pull on our wellies and natty blue hair nets at the School of Artisan Food's cheesemaking course, before tutor Paul Thomas has us emptying a churn of raw milk into a shiny steel vat. The milk is still warm from the cows that roam the Welbeck Estate in Nottingham, where the school is based (it's also the home of top blue cheese Stichelton. The aim of the cou...

Soup Tuesday: October 2014
http://soup-tuesday.blogspot.com/2014_10_01_archive.html
Not just soup. Not just on a Tuesday. Thursday, 30 October 2014. Add to the garlic flavour some poached eggs - I used a chef's ring to stop the egg from spreading everywhere and it came out just perfectly - and some chorizo and I found this soup to be one of the tastiest that I've blogged for a good while. And whilst we are on the subject of chorizo, do you pronounce it 'cho-ritz-oh' or 'chore-ee-tho'? Also, is it pronounced 'see-a-bata' or 'chee-a-bata'? Anyway, on to the soup. 3 Bulbs of Garlic. 2 Put ...
Soup Tuesday: September 2013
http://soup-tuesday.blogspot.com/2013_09_01_archive.html
Not just soup. Not just on a Tuesday. Wednesday, 4 September 2013. Ciorba de Perisoare - Romanian Meatball Soup. Running a soup blog, I invariably get asked the question "What is your favourite soup? So my round-the-world soupstravaganza hits Romania, which is undoubtedly most well known as the place where Dracula lives. I'm pretty sure some other stuff must have happened there, but really nothing of importance from the time Peter Cushing killed Vlad until the present time*. They did, however, come up wi...
Soup Tuesday: April 2014
http://soup-tuesday.blogspot.com/2014_04_01_archive.html
Not just soup. Not just on a Tuesday. Tuesday, 8 April 2014. The sun is (sometimes) in the sky and everywhere, nature is erupting from its winter slumber like an, erm, volcano of green things. And one of the greatest things about this time of year is wild garlic! Wild Garlic, yesterday, in a secret location. Of course, it goes without saying, if you are going to pick wild garlic, make sure that you know what it is first, no picking deadly poisons and then trying to sue me, okay? Juice of half a lemon.
Soup Tuesday: January 2015
http://soup-tuesday.blogspot.com/2015_01_01_archive.html
Not just soup. Not just on a Tuesday. Tuesday, 27 January 2015. Quibebe - Brazilian Squash Soup. Snow It's pretty, isn't it? In fact, pretty much nothing like what I imagine the weather is like in Brazil, where this recipe comes from. Although I imagine it gets pretty chilly in the Andes. (And yes, I did make a reference to the Andes without a) doing a Chilly/Chile pun, b) an Andes/Hands pun or c) referencing the movie Alive. I must be ill). Where does one acquire Piranhas from? 1tsp Dried Chilli Flakes.
Soup Tuesday: June 2014

Not just soup. Not just on a Tuesday. Friday, 27 June 2014. Avgolemono -WCFC2014 : Greece. Also, if you can't get orzo (rice pasta) you could just use ordinary white rice, and cook it for a little longer than you would pasta. Zest of 1 Lemon. Juice of 2 Lemons. Salt and Black Pepper. 2 Remove the meat and vegetables, shred the chicken and set aside. 3 Add the orzo pasta to the stock and simmer for 10 minute, until the pasta is cooked. 7 Garnish with some fresh parsley and then serve. Enjoy! And so Team S...

The Cheese Chap
Cheese of the Week. About The Cheese Chap. Baron Bigod and the raw milk revolution. In many ways the story of Fen Farm Dairy in Suffolk is a familiar one. Third-generation dairy farmer Jonny Crickmore and his wife Dulcie became so fed up with rock bottom milk prices in the late noughties that they decided to turn their hands to cheese-making. . Shropshire Blue wins British Cheeses Awards 2016. The British Cheese Awards was founded by Juliet Harbutt in 1994 and was acquired by the Royal Bath and West Show...

Cheesey Hits and Misses. Monday, June 30, 2003. Every week I will endevour to give you the 411 on the new ARIA chart. (That would be Australian Record Industry Association to the unintiated.
