Weeks start on Sundays after 2pm and end on the following Saturday at noon. This gives us time to prepare the cabin for the next guest. Deposit of $250 required to hold rental, refund of $200 available with at least 2 weeks notice of cancellation. Payment in full required at least two weeks in advance of occupancy. Wednesday, March 21, 2018. Seedlings Amidst a Wintry Spring. It's two days into Spring, but, alas, Winter seems to have no plans to make room for a new season. A nor'easter called "Toby" made Winter's stubbornness loud and clear by throwing snow all over our farms today! Gentle Spring seems no match for harsh Winter — if not for our thriving army of seedlings sprouting up in your humble CRO greenhouses! We visited a few farms recently and caught a glimpse of these little signs of Spring expectation.

Celeriac (Celery Root) and Potato Mash. 1 pound celeriac, peeled, cut into 1/2-inch pieces. 1/2 cup whole milk. 2 1/2 pounds of potatoes, peeled, cut into 1-inch pieces (about 6 1/2 cups). 1/4 cup chopped celery leaves. 1/4 cup (1/2 stick) unsalted raw butter, cut into pieces.
