Gotta love a Ghanaian dish! June 4, 2014. June 4, 2014. Also known as Sorrel, Bissap and Hibiscus Tea in other parts of the world. Wash the fruit of your choice with clean water. If you use pineapple or lemon, peel the skin off the fruit. Put the flower leaves in a pan and add enough water to cover the leaves. If you use pineapple or lemon, add the skin to the flower leaves. Put the mixture on fire to boil over for about 30mins (check to verify if the leaves are soft) and bring it off the fire to cool.

Marinade your chicken/fish with blended mix of ginger, garlic and onions. Add a little water and bring to a boil for about 10 mins. Blend tomatoes, pepper together. Sieve the mixture with a colander into the boiling chicken/fish. Add a little more water to achieve desired thickness. Allow mixture to boil for about 30 mins. Serve with any solid of your choice.
