Sunday, September 19, 2010. A Visit to the Farm and Fresh Corn Soup. I'm visiting my sister this weekend in RI, and we decided to take my nephew on a hayride at Confreda Farms. It's sweet, creamy, and delicious with a touch of acidity and bright herb flavor from the corn-herb salad. It's also very healthy because it only contains minimal extra-virgin olive oil for sauéeing and a bit in the salad. I hope you enjoy one of the last tastes of summer by trying out this fresh corn soup! Makes about 2 quarts.

Friday, August 17, 2012. The end of summer marks corn season at its pinnacle. I'm lucky enough to have access to local farms that produce fresh corn I can purchase quite cheaply. I particularly enjoy visiting Confreda Farms. In Cranston, RI to make my corn purchases. I recently hit them up for some of their sugar butter corn, which I used to make this risotto.
