I have made Arroz Con Pollo from my MILs cookbook. I have completed most of the entree recipes. I still have many many cookies, pies and candies looming over my head. I am not much of a baker. My dad told me a really funny story tonight. He ordered a side of beef every year. It was usually in cuts or ground beef. He would just go pick it up. That story was hilarious to me. Tales From The Crib. Sunday, February 7, 2010. Mommas Big Cookin' Weekend. This is my snowed in big cookin' weekend. Saturday was the husbands birthday. I made him biscuits and gravy, ranch baked chicken, twice baked mashed potatoes and lemon squares. I really out did myself. 1/2 cup powdered sugar. 1/4 cup flour or 1/3 if you think its runny. 1/4 cup lemon juice. Zest of two large lemons. For the crust, mix powedered sugar, flour and butter and pat into a 9X13 pan. Bake 20mins at 350 degrees.
