Swiss Chard and Potato Frittata. 3 tbsp extra virgin olive oil. 1 small onion, finely chopped. 1 large clove garlic, minced. 6oz/170g Swiss chard, separate stalks from leaves, finely chop both. 3 cups Yukon gold potatoes, peeled and grated. 1/2 tsp crushed red chili pepper flakes. 6oz/170g (about 2 cups grated aged Gouda cheese - or your favorite). 1 Preheat the oven to 400°F/200°C. 3 Remove from heat, stir in the garlic and red pepper flakes.
