In a saucepan, pour milk and cream. Grat the vanilla pod. Add the seeds and the pod to the liquid. Bring to a boil. Meantime, combine sugar, yolks and cornstarch in a bowl. Whisk until smooth. Crispy pralined chocolate mousse. 500ml whipping cream (38%). 200g dark chocolate 70% cocoa. 170g pralined milk chocolate. Melt the pralined chocolate in a bowl over a water bath (bain marie). Add cake crumbs. Stir to combine. Put the mixture in the bottom of 4 verrines (glasses). Melt the dark chocolate in a bowl over a water bath. Keep at room temperature until cold. Fill the glasses and chill for 15 minutes.
