I found a recipe for crab enchiladas with salsa verde several years ago (1998) and although it was very yummy, I found the recipe difficult and time consuming. Also, the recipe called for lump crab which at that time was expensive and not readily available in my local grocery store. OK, now for the recipe –. 1- 28 ounce can of green chili enchilada sauce. 1 tablespoon peanut oil.
