In two months Diego and I will be sweating our busts off in the happiest place on the planet! Thursday, September 29, 2011. It is an old tradition. In Urugauy to eat ñoquis on the 29th of every month. Since today is the 29th my mother in law and I made some. Warning: Time consuming. On average you will need two regular potatos per person. Boil with skin on so the potatos dont get too mushy. Boil till tender. Remove skins with a fork. Put potatos through a potato ricer. If you dont have one of the gadgets you can just mush them with a fork. NO LUMPS! This is 5 very large potatos. Posted by Sam Jo.

Sunday, May 20, 2012. After three days back at work my body and mind needed a break. I might have overdone it a bit at work but I relaxed a lot this weekend. My Morgan came into town for a wedding and we had some great sister time. Friday night was game night with some of our friends. If you have never played Harry Potter clue you are in for a treat. Monday, October 28, 2013. 30 Magical Moments: #7 Ride Dinosaur with My Eyes OPEN. Magical Moment #7 was more of a challenge than anything else. The first time I visited Disney's Animal Kingdom, I tried to ride Dinosaur. I say "tried to" because about one minute into the ride I was huddled on my sister's shoulder, whimpering into her ear, with my eyes tightly shut! I am proud to say that this trip I not only faced my fears, but we rode Dinosaur a few times and even hammed it up for the photos each time!

Pumpkin Cheesecake with Caramel Sauce. 1 1/2 cups gingersnap cookie crumbs. 3 tablespoons butter, melted. 1 1/2 pounds cream cheese, softened. 1 cup packed brown sugar. 1 3/4 cups pumpkin puree. 1/2 teaspoon ground ginger. 1/2 teaspoon ground mace. 8 ounces mascarpone cheese, softened. 2 large eggs, at room temperature. Caramel sauce, to top. 1 1/2 pounds sweet potatoes, peeled and cooked. 1/3 cup brown sugar. Salt, to taste. 1 1/2 cups chopped pecans. 2 medium onions, diced.

I even took it to work and they asked for more. This was a big hit. Saltine Toffee Bark. 1 cup cubed butter. 1 1/2 cups semi sweet chocolate chips,. 1/2 cup milk chocolate chips. 1 bag (8 oz) Heath Milk Chocolate English Toffee Bits. Bake at 350 degrees for 8 - 10 minutes or until bubbly. Sprinkle with toffee bits and allow to cool.
