Almost a new York tradition that has taken the world by storm but with the sourdough twist. Again because you are working with sourdough it takes time but it is worth it. 400g Sourdough Starter, (see previous post). 400g Strong White Flour. 200g Wholemeal bread flour. 40g high quality honey. Polenta for the bases. Divide into 11 – 12 equal balls.
