http://corksandcurds.blogspot.com/2009/01/heartland-chvre.html
Reflections on Wine and Cheese. Monday, February 2, 2009. My local cheese shop, Premier Gourmet. Recently started carrying a new line of chèvre from Heartland Creamery. Includes a natural (or plain) chèvre, plus several varieties that are rolled in an array of seasonings- e.g., fine herbs, lemon pepper, garlic and chive, and olive and pimiento. They provide housing, education, recovery programs, group homes, and vocational training for troubled adolescents and adults. I don't remember ever buying a c...

http://corksandcurds.blogspot.com/2008/12/insect-sushi-anyone.html
Reflections on Wine and Cheese. Monday, December 15, 2008. Insect Sushi, Anyone? The following story has nothing to do with wine or cheese, but I couldn't resist including it. The insect sushi platter pictured above was created by Shoichi Uchiyama, author of a recent Japanese cookbook on bug cuisine. Featured insects include a spider, a cockroach, a cicada, and cicada larvae. Photo credit: Rex Features. Subscribe to: Post Comments (Atom). View my complete profile. Reflections on Wine and Cheese. Friday, February 23, 2007. Strange Saxon Shires Reaction. I don't know what the medical explanation of my daughter's reaction is, but I would caution parents of small children against giving them samples of imported or gourmet cheeses- unless they think they have a better understanding of what happened with my daughter than I do. Monday, February 19, 2007. Here is a novelty cheese you definitely need to try: Chocolate Fudge Cheese. Thursday, February 15, 2007. I tried my f...

Cooking In A Barn: I'm baaacckkk! Gringo-style crock pot pozole
http://cookinginabarn.blogspot.com/2010/10/i-baaacckkk-gringo-style-crock-pot.html
Wednesday, October 20, 2010. Gringo-style crock pot pozole. It's been way too long. For those of you wondering what rock I was hiding under it's called "10 year high school reunion." Oy vey, just hurts thinking about it doesn't it? Now that it's over and went better than I thought, (never mind those extremely low expectations I had) it is about darn time I get back into the swing of things. The recipes are stacking up next to me so look for more to come real soon. Kinda interesting. Hominy, one of th...
Cooking In A Barn: July 2010
http://cookinginabarn.blogspot.com/2010_07_01_archive.html
Monday, July 26, 2010. It was especially a bummer because Rees is sick today. I was making this dinner to encourage him to feel better. Suddenly I was bleeding all over the place, which was of course the same time the oven timer was annoyingly beeping at me. Frustration! In reality I wear stained sweats with Crocs (the Balarina Crocs of course! 5 lb whole chicken (insides removed). Half an onion, quartered. Several sprigs of fresh thyme, oregano and rosemary. 2/3 of one bunch of flat leaf parsley. Rub th...
Cooking In A Barn: Roasted Tomatoes
http://cookinginabarn.blogspot.com/2010/07/roasted-tomatoes.html
Wednesday, July 21, 2010. Three pounds of Roma tomatoes for $1? If you know me, you know my love for tomatoes. This is my time of year. Last Friday, Saturday and Sunday, Henry's Market ran a great sale on you guessed it, TOMATOES! I loaded up on few pounds with big plans to make a ton of things when I returned from my weekend getaway. The excitement continued this evening when I back to Henry's post sale and discovered that through Wednesday, the tomatoes are two pounds for a $1. Not too shabby. Picture ...
Cooking In A Barn: May 2010
http://cookinginabarn.blogspot.com/2010_05_01_archive.html
Tuesday, May 25, 2010. San Diego has a dark secret. It's called May Gray. That's right; it's actually not insanely perfect here every second of the day. I know, shocking. Right now, we're dead-smack in the middle of it. The worst part is that it looks like it's going to rain but never really does. The recipe appears in his Bouchon. Thomas Keller's Soupe A L'Oignon adapted from Bouchon with minor changes from the Discount Chef. 6 large sprigs of thyme. 4 tablespoons unsalted butter. 4 tablespoons olive oil.
Cooking In A Barn: For the love of the rind
http://cookinginabarn.blogspot.com/2011/05/for-love-of-rind_15.html
Sunday, May 15, 2011. For the love of the rind. At the cheese shop we sell a lot of Parmigiano-Reggiano and we're not alone it is actually the world's most popular cheese with thousands of culinary uses - hello Parmigiano and honeycomb, a match made in cheese heaven! An often overlooked element of this fabulous fromage is the rind. BTW, if you've never seen an entire 85lb wheel of Parm being opened, it's quite a sight and oh the smell! Here's a link to a Venissimo Parm opening. To me, nothing says "I car...

Reflections on Wine and Cheese. Wednesday, March 4, 2009. Thursday, February 26, 2009. Dancing Buffalo Apple Icewine. Carl Schmitter of Chateau Buffalo. And Dancing Buffalo Cidre. Recently released an incredibly unique and tasty concoction that you won't find anywhere else: Glace de Ballet Apple Icewine. This delectable dessert wine is a sweet and refreshing change of pace. Once back inside, Carl takes the wine through a series of three 'rackings.' In this process Carl allows the solids in the icewin...
give me, this day, my daily cork and curd...
Give me, this day, my daily cork and curd…. Baked fish parmesan; French green beans with toasted almonds; and fizzy citrus-tea vodka. Posted by corksandcurds under almonds. Fish parmesan (foreground), and French green beans with almonds. The fish and the vegetables can be good for 3 meals (or 2-3 people). The fish is definitely plenty enough for 3 meals; but it could be a stretch for the vegetables on the third meal. 6 oz fresh French green beans. 1 oz almonds, slivered and toasted. A dash of salt. Fille...
