Crostini and Chianti: June 2012
http://crostiniandchianti.blogspot.com/2012_06_01_archive.html
Healthy food with an Italian influence. Saturday, June 30, 2012. Happy Fourth of July! Here is a wonderful pasta salad that you can make on the grill, no sense in heating up the kitchen. 1 zucchini, cut in half lengthwise and then cut into 1/4" pieces so you have 1/2 moons. 1 yellow squash, cut just like zucchini. 1/2 small red onion cut into slices and the rings separated. Mushrooms, cut the hard end off from the stem and then slice mushrooms. 1 red pepper, cut into 1" pieces. Parmesan curls for garnish.

Crostini and Chianti: Simple Salmon
http://crostiniandchianti.blogspot.com/2012/09/simple-salmon.html
Healthy food with an Italian influence. Sunday, September 23, 2012. This is a simple recipe I found in my files. I am not sure where it came from, so if it is yours let me know. The original recipe only has 3 ingredients, I added a fourth to give it a little kick. If not try it, it's so simple and delicious. The sugar will met and create a glaze. You could switch out the mustard for another "sticky" substance and add herbs and spices to the sugar for different flavors. Preheat your grill to high. This lo...

http://crostiniandchianti.blogspot.com/2012/10/guinness-beef-stew.html
Healthy food with an Italian influence. Sunday, October 7, 2012. Today is the first day in a long time where the temperature won't climb above the 50's for the high and the low will be in the 40's. Naturally my thoughts turn to cool weather food. Beef stew was what we decided on. Beef and Guinness Stew. 1 1/2 lb. beef, cut into bite size pieces (I had London Broil that I cut up, but you can use stew meat from grocery store). 2 tsp canola oil. 1 bottle Guinness beer. 1 tsp dried rosemary. 2 tsp cold water.

http://chefgeneman.blogspot.com/2010/10/test-kitchen-update-red-enchilada-sauce.html
Monday, October 4, 2010. Test Kitchen update : Red Enchilada Sauce (4) "My version". I have tasted mangos with spicy flavors before, and it balances well together so I figured it will be very tasty. I will add the mango and lime juice at the blender stage to get the maximum flavor from the mango. This may change the dominant flavor from the dried ancho chilies to the mango, as mangoes have a strong flavor. I will post my findings tonight. Posted by Philip Geneman. Monday, October 04, 2010.
