Recovering from a couple days of fever, I wanted to make a soup that I had all the ingredients on hand for, and would be easy on my stomach. After getting fennel last night, this recipe looked good: leek, zucchini, and fennel soup. I didn't have vegetable stock, so used water as the liquid, but the soup still cam out plenty flavorful, and very creamy considering the only ingredients were vegetables and water!

The fruit and beans are good car snacks, and I thought I'd supplement that by turning the zucchinis into zucchini bread. I used the recipe from smitten kitchen.
