http://hungrylikethewilfs.blogspot.com/2012_07_01_archive.html
Hungry Like the Wilf. Saturday, July 28, 2012. I know a lot of people have "their" chicken enchilada recipe but I have to say, this one is the best I have tried and I wouldn't change it! We eat this on a regular basis and it is a family favorite - flavorful but not too spicy, healthy but not so healthy that it doesn't include some good cheese and sour cream, makes a large batch so there is always leftovers (which are always just as good if not better the second day! Recipe from Camille Johnson. Remove sa...

I finally hit the wall when I came home from Trader Joe's a few weeks ago with several items I already had in my pantry but didn't know about because there was no organization to it! Does that really make sense? Here ...

When I say huge, I mean a 7 1/2 pound chicken. small turkey? No, it really is a chicken but it does feel a bit like we are doing a Thanksgiving preview around here. Watching some football, the bird is in the oven, not a bad way to spend out Sunday. Recipe adapted from www.fortheloveofcooking.net. 1 Tbsp. softened butter. 6 cloves garlic, smashed.

Hungry Like the Wilf. Sunday, August 26, 2012. I love fish tacos. they always take my husband and I back to our vacation in Mexico this past winter. The recipe I tried tonight was delicious. Our favorite parts were the Pico de Gallo and the Southwestern Slaw. The fish was just a nice base for it! We agreed that we would even love to simply do black bean tacos with the Slaw and Pico next time. Recipe adapted from www.epicurious.com. 2 lb talapia or other mild white fish. 1/2 c vegetable oil. Salt, to taste.

Hungry Like the Wilf: October 2012
http://hungrylikethewilfs.blogspot.com/2012_10_01_archive.html
Hungry Like the Wilf. Monday, October 29, 2012. I hosted a Halloween party for my boys and wanted to make a somewhat sneaky healthy treat for the party. I cooked up a batch of my pumpkin muffins. And decided they needed a little something special to make them "party-worthy". Enter a quick batch of DELICIOUS cream cheese frosting! It was perfect. The kids loved them; I loved them; I felt good about what I was feeding the kids. 4 oz cream cheese, softened. 4 Tbsp. butter, softened. 1 c powdered sugar.
