Monday, March 14, 2011. She only filled them with prune butter AKA Levkar which she made with Italian prune plums in early fall. She would make jars and jars of the stuff. As a child I never was too fond of this dark filling so she would make me some with cherries or apricots. Now I adore that prune butter and found a jar of it calling my name on the shelf at the local grocery store! 1/2 cup unsalted butter or unsalted margarine. 1 1/4 cups sugar. 1/4 cup orange juice or milk. 1 1/2 teaspoons vanilla.

Sometimes I use walnuts, sometimes pine nuts, at times a combination of Italian parsley and basil. But today I made this quick and easy Pesto with walnuts and basil. 2 cups firmly packed basil leaves. 1/3 cup of chopped walnuts, toasted. 1/2 cup freshly grated parmesan. Pinch of kosher salt. 6 T olive oil. Makes approximately 1 cup. 1 lb large shrimp, peeled and deveined. 1 T olive oil.

Many thanks to a food forum where this recipe is shared, it has been a big hit here for the past several years. I've made it with the cream cheese icing and also without. If without I usually sprinkle with some powdered sugar. Very simple and tasty treat! 1 cup butter (2 sticks), room temp. 2 cups canned pumpkin (one 15-oz. can). 4 eggs, room temp. 2 tsp baking soda.
