The above was taken today, and the below was taken just two weeks ago. Amazing the growth in such a short amount of time. You can see the sunchokes in the background really taking off. I’ve been wanting a Jostaberry aka Ribes x culverwelii since I heard about them in my permaculture class. I am a huge fan of edible perennials! When I saw it this spring at the local plant store, I couldn’t really resist. Jostaberry is a hardy plant good in USDA zones 3-8 and down to –40F! I pushed down with my boot around the edges to make sure it was level and the air gaps were taken up.

I’ve been making a variation of this Tofu Scramble for some time now. I swore I had posted this before, but when I went to show someone the recipe I couldn’t find it. You can add or change this recipe as you see fit. It is very flexible and a great starting point for experimentation. Add some peppers or some fresh onion/garlic. Maybe you like mushrooms. There are dozens of versions on other sites. Go crazy. Experiment. It is all good! 1 brick of extra firm tofu, squeezed. 1 tablespoon fat free soymilk.
