Call us: 32 2 736 53 54. The manufacturing process for both Xantham Gum and Gellan Gum are very similar:-. Xanthan gum is produced by aerobic submerged fermentation using the bacterium Xanthomonas campestris, a micro-organism which is found naturally on cabbages. Gellan gum is produced by the same process using the bacterium Pseudomonas elodea. The gums are recovered from the fermentation broth, by addition of alcohol (usually isopropyl alcohol) causing precipitation of xanthan and gellan fibres. The fin...

Call us: 32 2 736 53 54. Gellan gum, which forms gels on cooling, is a versatile and effective gelling agent. It is available in two forms (high or low acyl content). The acyl groups have a profound influence on gel characteristics. The high acyl form produces soft elastic gels, while the low acyl form produces firm brittle gels. They may be used alone or blended to give products with the desired characteristics. Gellan gum functions as a structuring and gelling agent in a wide variety of foods. Typi...
