Sunday, June 26, 2011. In which the kids go crazy over sweet potatoes. Lately we've been dabbling in some alternative baking. Our first attempt was a black bean chocolate cake (you can read about it here. The adults loved them and two out of our three child testers gave them the thumbs up. I suspect the third rejected them on the basis of the chunks of walnut and not the overall flavour. I definitely think we'll be trying these again next time we get golden sweet potatoes in our veg box!

Monday, August 27, 2012. Beet, Orange, Fennel and Kale Salad. Beets are great with walnut. The beet leaves from this weeks box are small , so make lovely salad leaves. Orange and fennel have always been friends and this week's tiny fennel bulb is perfect for salad. Together with walnuts it gives great crunch. I used pretty much all this week's carrot allocation in the following soup as the island has now reverted to winter . again. Carrot, Ginger and Coconut Soup. All our carrots - peeled and chopped rough. 3 medium/large onions, sliced up. Thumb sized knob of ginger, peeled and finely grated. Large pinch of cumin powder. 1x 400 ml tin coconut milk. Large, heavy bottomed saucepan. Heat up, and splash of veg oil (not olive).

Even when I am home alone, I will make up a vegie pasta and then indulge myself in a solo meal (sometimes getting to catch up on a novel).
