With a confused and slightly disgusted look they wait for my answer as if I will have to admit under certain conditions I do have to use oil. But I give them the same answer every time, water, veggie broth, wine and sometimes nothing. It is a very common discussion when you tell someone you don’t eat oil. He suggests this as a good post work out meal, but I say it is a good “anytime” meal. It takes less than five minutes to make. This is a no-oil sauté dish and easy to prepare. No-oil sauté garlic mushrooms. Frac14; cup shallot, minced. 2 garlic cloves, minced. 2 cup loosely packed wild mushrooms such as king oysters, shimiji or chanterelles. 3 tbsp madeira or marsala wine. 2 tbsp fresh chives, minced. Sea salt, to taste. Freshly ground black pepper, to taste.
