Nine botanicals are steeped in the stills for 15 hours to soften them and bring out more flavour before distillation. The cooking/distillation time for Fords Gin is 5 hours. John Dory, the legendary still making company built two stills for the Thames Distilling Company. These stills, appropriately named Tom Thumb and Thumberlina. Are used to distil Fords Gin. Juniper, coriander and angelica root up front with developing layers of citrus, jasmine and hints of vanilla in the back. Very pleasant on the nose, bright and aromatic. Prominent mid palate presence, with juniper oils on the center tongue and full aroma on top palate. Citrus oils excite the side palate beautifully. Under tongue stays dry yet animated. Excellent mid palate structure to serve as base for mixing. Dryness coming from jasmine. At 90 proof Fords Gin holds in a lot of flavor.

Our botanicals are sourced from Joseph Flach and Sons who have been importing medicinal and culinary herbs and spices to London for over 125 years. Fords is a juniper-forward gin but with a good amount of citrus, sweet spices and florals to take the bite off of the juniper, but still add complexities and allow the juniper to be the star. 2 oz Fords Gin. 3/4 oz Freshly Squeezed Lemon Juice. 3/4 oz Honey Syrup. Shake ingredients with ice and strain into a cocktail coupe. This is a classic sour drink from The Ritz in Paris, the honey compliments the jasmine and floral notes in the gin. 1 3/4 oz Fords Gin. 3/4 oz Gran Classico or Suze. 1 oz lavender infused.
