Monday, September 10, 2012. 1 cup organic mashed potato, cooled. 1 can organic brown lentils, rinsed. 4 organic spring onions thinly sliced. Handful of chopped organic parsley. 1 organic free range egg, lightly beaten. 1/2 cup dry breadcrumbs of choice. Can add 1 tbs curry paste or 2 tbs satay sauce. Place all ingredients in a bowl and combine. Divide mixture into four patties. Heat some olive oil or coconut oil in a pan. Cook patties for 2-3 minutes or until golden and warmed through.
