The carnivorous may huff and the vegetarians will shiver with delight, but this version of a traditional tortilla soup was a surprisingly hearty one-bowl meal. You really can’t go wrong with a great base garnished with all things good– roasted baby heirloom tomatoes, soft goat cheese, and cilantro (unless you are genetically cilantrophobic–I’m sorry). 1 red onion, diced. Three cloves garlic, chopped. A few dollops of olive oil here and there.

So, I end up freezing them - but now I have a freezer FULL of bananas! And the perfect use for extra bananas is to make a batch of muffins.
