Sweetening Hard Cider?: wine_making

Last time (first time) I made sparkling hard cider, it turned out strong, dry and tart. I sweetened it in the glass with agave nectar, which made it quite excellent! Any ideas about better ways to balance the sweetness? Use camden tablets to stop the fermentation sooner? But could I still make it sparkling if I did that? Any tips would be much appreciated. (P.S. Crazy cat lady (. I'm starting a batch of plum/damson wine today. I'm lucky in that where we live there are loads of trees that grow small plums or damsons, both red and yellow, so this batch will be a mixture of the two. The recipe that I'm using asks for red wine yeast, but I don't have any, although I do have a pot of Youngs Super Wine Yeast. What I need to know is if this should be OK to use? Sake, and Wine Experiments. I hope I did the LJ-cut thing right. The Katadyne Combi, a survivalist water-filter. The thing filters 30,000 gallons without a filter replacement (you just clean the one it comes with), and offers both Carbon and Ceramic filtration - and you can use only. Ceramic filtration as a choice (just remove the carbon). The carbon is put in by the user and is entirely optional.
