I learnt from last years mistake and took more cash this time, which was just as well as I brought lots :). Recreating recipes for gluten sensitive foodies! When I’m craving something really satisfying, I make this dish. While there are lots of variations, I found that making it in the following way is uber tasty! Simply cut up 3 large or 8 small eggplants and salt lightly. In a bowl add 2 cups of gluten free flour such as Red Mill’s. 1 to 1 gluten free flour. In a second bowl combine 3 large eggs with 3/4 cups of grated parmesan cheese and 1/2 a teaspoon of salt. Fry about 2 minutes per side until golden brown.
