November has well and truly kicked in after a mild September and October, so it’s time for some proper stick-to-your-ribs home comfort food. Mushroom and Chestnut Risotto. 1 large banana shallot (or two smaller ones). 2 cloves garlic, crushed. 2 tbsp olive oil. 2 cups finely chopped chestnut or portabella mushrooms.
