A collection of original and adapted Gluten Free recipes. Monday, September 7, 2009. Celiac disease is an inherited, autoimmune. Disease in which the lining of the small intestine is damaged from eating gluten and other proteins found in wheat, barley, rye, and possibly oats. I found out that I tested positive for Celiac about a month ago. It was both good and bad news. Because that's how it is. I'm not asking for sympathy, but its harder than the other 132 out of 133 people realize it is.

Tonight we had 'Warm Spinach Salad with Quinoa' (original recipe and fantastic photos found here. This is the second time I've ever had quinoa. The first time, I didn't really care for it, but this recipe was really great. And the best part? It only took 20 minutes. On a positive note, I've felt less tired the past 2 days or so. I've woken up before my alarm, and have felt alert most of the day.

Monday, August 18, 2014. Jack's "half" birthday was on the 14th. We have come a long way in the last 6 months. We can't believe how fast he has grown or how much! It's no surprise to any of you that the beginning was stressful and rough.rougher than I ever imagined it could be. Jack turns 9 months on Friday and since we'll be on the road to Vegas and posting fun pictures, I figure I'd give you something for now and then you can ignore all my other photos. :). We are so in love with this big kid! His Drs appointment is next week but I suspect he will continue to be at the higher end of the charts for weight and height.
