Friday, June 25, 2010. We have talked about liking Gazpacho, but I thought this recipe. Looked great with adding the pasta to it. Modifications: I added about 32 oz of tomato juice and after sitting for two hours, the noodles soaked it all up. It was great. I also think it could use another jalapeno, if you wanted. Monday, June 8, 2009. We have a ton of travel planned for the summer and an overall crazy schedule, so I'm not going to be posting menus until school starts in the fall. Jenn's Menu Week of 11/30. 1 Saute in olive oil - 1 large onion, 1 chopped gr pepper, 8 gloves garlic. 2 After sauteed - add in 5cans broth, 2 cans stewed tomatoes, 2 tbsp dried basil. 3 Also saute - 1 lb italian sausage (I use turkey sausage) and add to soup. 4 Add - 1 bag spinach leaves. 5 Add to taste - 1-3 boullion cubes, salt, pepper, tabasco. 6 Just before serving add: 1 lb cheese tortellini and cook until tender. 7 Top w/parmesean cheese. Saturday, January 31, 2009. Jenn's Weekly Menu February 2. I think we have some yummy food planned this week. I do realize now that I have leftover enchiladas on Monday and then again on Wednesday so Monday's menu may change to something else "simple" like spaghetti - we'll see. Monday - Leftover enchiladas. Tuesday - Grilled cheese and tomato soup (never had this last week). Thursday - Chicken Scallopini and Orzo Toss. Friday - Ham and Asparagus Quiche. Sunday - Kung Pao Chicken. Scheri's Week of 1/26.
