Few drops of vanilla essence. Sieve dry ingredients, rub in marg. Stir in eggs, essence and liquids. Beat well. Grease and flour 2 x 8″ (not loose bottomed) sandwich tins. Cover with a plate (and weight as required) to keep the vegetables submerged. Stand for 2 hours and then drain thoroughly. Boil the following for 2 minutes (in a preserving sized pan):. 6 cups white (wine? 35 cups granulated sugar. 2 tsp celery seed. 4 tsp mustard seed. Add the courgettes and onions and remove from the heat. Stand for another 2 hours.
