Aiden’s Mexican Meatloaf. 2 lbs ground beef. 2 c crushed tortilla chips. 1 small can enchilada sauce. Or a large can, and use half to pour. 1 c shredded cheese. 1 T taco seasoning. Put in oven until temperature hits 170*, about an hour and a half. I served this with corn, refried black beans, and tortillas! By the way, my mom helped a little.).

So, my little ones (ok… Not so little anymore, they’re 10 and 9) went to visit their grandparents for about 6 days… and my youngest called tonight crying and saying that he just wanted to come home. Ugh! If he wasn’t 3 1/2 hrs away, I just may have gone. Ok, ok… Not really… But I thought about it! It just makes my heart sad to hear him so sad. I love that boy soo much! A peek into my world…. In Austin, Tx. My best dogfriend…. It’s been a crazy few days here at my casa…. and I’ve been a worrywart! The vet thinks that it’s a strained ACL. We decided to wait on the xrays for now and just take my dog home and give him meds to see how that works. He’ll probably end up with xrays later but that’s ok.
